Love Food Hate Waste Nottinghamshire can help you save money and help the environment by reducing the amount of food you throw away every week.

Wasting food costs the average family £420 a year; it also has serious environmental implications.  Almost a third of all the food we buy ends up being thrown in the bin!

How can we save food and money?

The County Council’s waste team is challenging you to share your top tips or recipe ideas for using up food. Check out some tips already sent in.

We’re particularly interested in hearing from people who have recipe ideas using up traditional Notts fare.  What do you make for tea when you’ve left over Bramley apples or perhaps some Cropwell Bishop stilton?

My top Love Food Hate Waste tip is:
Think ahead - if you know you will eat out twice in a week, don't buy 7 days worth of food.

My recipe is: Fridge Bottoms

Ingredients:
This recipe doesn't have any set ingredients - as the title suggests, it all depends on what is lurking at the bottom of the fridge

Instructions:
1. In a large frying pan heat a small amount of fat - this could be olive oil, sunflower oil, butter, etc

2. Fry a chopped onion or leek or spring onions until soft. A chopped clove of garlic would be a nice addition now, but isn't that important.

3. If you have any meat, cut it into bitesize pieces and throw it into the pan now. If the meat is raw, cook until browned. If the meat is already cooked, heat gently. If you don't have any meat, you could throw in a small tin of tuna, or move onto the next step.

4. Cut any vegetables you have into bitesize pieces and throw these into the pan. Anything goes (except raw potatoes, turnip or swede which take a long tome to cook). If you don't have many fresh vegetables, bulk out the meal with frozen veg.

5. Now is the time to add some flavour. To create a sauce, add in one of the following: - Tin of chopped tomatoes - Tin of creamed soup - Leftover jar of chinese or curry sauce

6. Heat the sauce through, adding salt & pepper to taste. Herbs are also good if using tinned tomatoes or soup - experiment to find your favourites.

7. Serve with pasta, rice, couscous or noodles, or use to top a jacket potato.

If after cooking rice you have some left over, simply let it cool, pop it in a freeze bag and freeze, to re-use the rice, microwave with a dash of water for a couple of minutes.

My top Love Food Hate Waste tip is:
Pasta sauces and pestos can make 2 or 3 meals if you separate the jar into 2 or 3 tubs/ boxes / freezer bags and stick in the freezer. They defrost within an hour or so.

My recipe is: Roasted Vegetable Pasta

Ingredients:
Any roastable veg; carrots,onions, challots, peppers, celery, potatoes, tomatoes, courgettes, aubergine, mushrooms etc. Salt and pepper. Balsamic Vinegar. Olive Oil. Paprika / Chilli / Cayenne Pepper (to taste)

Instructions:
For any veg that's looking a little past it's best simply cut into similar sized pieces (50p sized works well) scatter on a baking sheet, sprinkle on other ingredients and leave in the oven at about 160 degrees for 45mins to 1 hour. These can then be stirred into hot pasta or cous cous, frozen in batches or kept in the fridge for another 2-3days and taste great.

Easy Love Food Hate Waste tips to get you started

Buy a big block of cheese, grate it all and freeze in portion sizes. Quick to chuck in your cooking, easy to defrost in the fridge overnight.

Seal your flour in a tightly tied or clipped plastic bag for a longer life.

You can freeze semi-skimmed and skimmed milk, for example if you have a pint left but you’re going away for the weekend. It’ll still be fresh, and ok to use for a cuppa, when you get back.

Store your potatoes and onions somewhere cool and dark (a cotton bag in the cupboard is a good option). They’ll last longer before sprouting.

Only used half a courgette for tea? Half a pepper? Half an onion? Pop them into a spare lunchbox or tub & keep them in the fridge. You can use them another day.

Stop salad leaves going soggy in the bag but putting a piece of kitchen roll in the bag, underneath the leaves.

Is the meat in the fridge about to hit its use by date? Cut it into strips and freeze them. The strips work great in stir frys.
