Potato Christmas trees

Ingredients

  • 450g  potatoes
  • 2 yellow peppers
  • Mix vegetables
  • 1 egg
  • 150g butter

Method

  1. Preheat oven 200c. line a large baking tray with baking paper.
  2. Peel and quarter the potatoes and place in a large pot of boiling water. Cook until tender (time will vary by the size of the potatoes but expect to cook for 20 minutes). Drain and transfer to a large bowl.
  3. Add butter and season with salt and pepper, mash potatoes well. Allow to cool for 10 – 15 minutes, until potatoes are not hot to touch.  Mash in the egg and beat thoroughly with wooden spoon until potatoes are smooth.
  4. Transfer potatoes to a piping bag fitted with a large star tip. Pipe potatoes onto the baking sheet in descending peaks to form Christmas trees.  Brush gently with additional melted butter, try not to smudge the tree shape. Bake for 15-20 minutes, or until golden brown.
  5. While the potatoes are baking, use a sharp knife to cut small stars out of the yellow bell pepper (be careful, especially if young children are around). Cook mixed vegetables.
  6. Place the star on top and assemble the mixed vegetables to look like baubles on a Christmas tree. Serve hot.
